So there is one yummy, super fast meal I have mastered: toaster oven quesadilla. It is fast, easy, and you can use a ton of different things and it will still be edible!
I am horrible about making meal decisions. Ask anyone who has had to live with me. Tonight was one of those nights so I fell back on my old reliable quesadilla. Another bonus is they require very little and I could afford these even when I was dead broke.
Here is tonight's version:
One 10 inch flour tortilla
Few spoons of black bean and corn salsa
Handful of shredded mexican blend cheese
Put some foil on the pan (I hate doing dishes). Drop on the tortilla. Sprinkle some cheese. Spoon on the salsa. Sprinkle more cheese. Fold in half and bake at 350 for about 8-10 minutes.
So the ingredients cost me less than $7 including tax. I can make the 10 quesadillas and still have salsa and cheese left over. So a whopping 70 cents for a pretty decent meal. Oh! I had sour cream too, so add a few cents.
I loooove refried beans on these too. I trade them out for the salsa, but the salsa works great as a garnish in that case. Mushrooms, salsa, and cheese are awesome too.
Can you tell I'm proud of me for this? I am. My mom is a good cook, so is my dad. I don't know what happened to me.

Actually for an "undomesticated" dish, sounds pretty good. "Big Boy" forced us to stay home sick from school, think I'll throw one together or clean out the fridge trying! Thanks!
