So I forgot the mousakka recipe. Not my fault-blame finals preparations. Have no fear-part of this weeks assignments is French cuisine...ha. Gonna be fun.

I never really do much for Halloween. Which is convenient considering I'm usually working. This year is no different. And this always seems to be the week where my schedule is all sorts of goofy. So no time for anything :(

On top of work I have SCHOOL work by the ton. We're making a real effort to pay more attention to our meals and taking our vitamins. So obviously I don't want to have fast food every night. Okay. So I wouldn't mind a McDouble on a regular basis, but I can't.

Point here is I found a fairly easy meal that is chock full of yummy veggies and cheese. And it was good! Yay! Points for me! I took a typical Moussaka recipe and used extra eggplant and zucchini, lean ground turkey instead of lamb, and low fat cottage cheese instead of ricotta (I think). I will dig up the recipe and put it up tomorrow.

If I get brave, I may even post a pic or two of the beautimous paintings I did this week. I don't know why I started, but I need to stop before Dustin is out of paints and small canvases. I should leave this work to the professionals.

For now I will try and get some sleep. Brain cells need a chance to regroup. Nighty night!

Super quick dinner

So there is one yummy, super fast meal I have mastered: toaster oven quesadilla. It is fast, easy, and you can use a ton of different things and it will still be edible!

I am horrible about making meal decisions. Ask anyone who has had to live with me. Tonight was one of those nights so I fell back on my old reliable quesadilla. Another bonus is they require very little and I could afford these even when I was dead broke.

Here is tonight's version:

One 10 inch flour tortilla
Few spoons of black bean and corn salsa
Handful of shredded mexican blend cheese

Put some foil on the pan (I hate doing dishes). Drop on the tortilla. Sprinkle some cheese. Spoon on the salsa. Sprinkle more cheese. Fold in half and bake at 350 for about 8-10 minutes.

So the ingredients cost me less than $7 including tax. I can make the 10 quesadillas and still have salsa and cheese left over. So a whopping 70 cents for a pretty decent meal. Oh! I had sour cream too, so add a few cents.

I loooove refried beans on these too. I trade them out for the salsa, but the salsa works great as a garnish in that case. Mushrooms, salsa, and cheese are awesome too.

Can you tell I'm proud of me for this? I am. My mom is a good cook, so is my dad. I don't know what happened to me.

What will my disaster be this weekend?

I'm not sure yet. But my weekend is just beginning (Tues-Sat. workweek) so there's plenty of time to cause trouble. Half considering some cheesecake experimentation. I do feel better about the (now absent) rice krispy treats. I asked around and apparently I'm not the only one who had trouble making them in the beginning. Or maybe everyone is trying to make me feel better, I dunno. Dustin was very sweet about it-he even ate some of that garbage-in-a-pan. I'm not sure where they are now, they have been MIA since I got home.

Before I do anything, I will have to tear myself away from Facebook and Sorority Life. I don't know what my obsession is with the game, but I'm starting to worry. I've also been playing around on blogspot learning my way around. I see other sites that are pretty nifty and I want to link to them, but I haven't found yet where to add them to the side of the page.

For some reason when it gets cold out, I try to get into crocheting. I. Am. Awful. I have tried several times to get into it and always end up just crocheting a long rope of yarn. It never turns into anything. I would love to make a beautiful quilt like the one in my imagination. In my imagination I rock at all things craft related.

Maybe I can find an artsy class to take next semester. Although I'd hate to waste my scholarship and grant on a bad grade...maybe I should stick with what I know LOL

Okay. I have tried more than a few times to make rice krispy treats. They're good little chewy pieces of happy. I make flat blobs of whaaaaa? instead.

I attempted to post a pic of the ick. Craziness. It is a thin flexible sheet of shiny tan stuff. And it doesn't taste right.

One of my best friends in the world is an amazing stay at home mom and wife. She has two beautiful, smart, and well behaved (to me at least, several hundred miles away) kids. I have no clue how she does it without killing the kiddos or her husband.

It's not just that she does it. It's that she does it so damn well! I am so clueless and inept when it comes to home economics type stuff. I can cook pretty well, and I can wash my own laundry. And that's about it. I know the basics, sure. But I am beyond happy to step back and let my much more qualified (and willing) husband work his household magic.

But I want to try some of it. I will probably jack shtuff up beyond all recognition. But it's time for me to become somewhat skilled in homemaking.

Here's some basic info on the upcoming trainwreck:

My name is Becky. I'm work full time in retail for a major chain. I also go to school full time, majoring in Liberal Arts. I squeeze in volunteer work and fund raising when I can.

I'm 30 years old. Happily married to an amazing man named Dustin.

We are both part of the Order of the Eastern Star and Dustin is a Mason.

We don't have any children yet. I have PCOS and that is just tons o'fun.

I grew up just on the edge of New Orleans, LA. Yes, I was in Katrina. She ate everyones stuff and I am not a fan of hers.

We currently live in the middle of no-dang-where Mississippi. It is quiet, beautiful, and (woot!) much cheaper than what I am accustomed to.

My family is awesome. By family I mean: my actual blood relatives, inlaws, and my friends who may as well be blood. My mother is hilarious even though it's not always intentional. My brother is just as goofy. So was my father, and the world is better for having had him in it. I wonder how I turned out silly? Hmm.

I have a unhealthy addiction to my BlackBerry. They call them CrackBerries for a reason.

So...I think that's about it.
